Thanks for a very informative video. You mentioned regrinding and incorporating the spent blocks into your next batch of Shiitakes. In the previous batch if much of the nutrients have been consumed and the mycelium and spores are killed in the stereilization process how exactly then does this help enrich the substrate for the next batch? Thanks.

I live in sacramento and i have found white and black truffles...The place i go is in a flood plane so the oak trees and pines .. shallow root sestem plenty of leaf litter on top and soil is always moist and lots of earth worms....What cool is the roots being so close to the surface , the truffles push the leaf litter up and you can spot them ....

What if I don't wanted to reproduce yet cause is 80s ? DO I wait until fall and put the block in the fridge before I open it?or I could still use it and look for a spot that is shady?

I have heard over and over again that shiitake need to be "shocked" to begin fruiting.. Slapping them, or giving them a bath, or chilling/freezing them. Do you guys do that, or is the mere act of transferring them from the warm incubation room to a cool fruiting room enough to do that? Have you experimented with water baths/"slapping" them?

so sad that a "professional" mushroom person like you doesn't know the difference between a yellow foot and a chanterelle because yellow feet mushrooms are absolutely not chanterelles they're not even in the genus whatsoever take a look and you will notice that the genus is different it's not a chanterelle. it's actually more closely related to the black trumpets which are both the same genus whereas the chanterelles are completely separate genus you should be ashamed to call yourself a professional

This is probably the best way to grow Maitake commercially, but this is not an informative or instructional video. I'm just speculating that Bob is probably more on the selling and marketing side of the operation. Nobody but chefs call the caps "Fronds" (although the Latin name is Grifola Frondosa) and they don't grow naturally in leaf litter, hard-woods only, most often on oaks. He also seemed unsure of the fruiting requirements and specific health benefits. This company is legit just be aware this is not a beginners mushroom, they take a long time to grow. If you live in the eastern US try foraging first, it's an easy one to spot. Easier to just let nature do it for you.

I recently found an 10'x10' patch of Yellowfoot in the Salem, Oregon area. New to foraging but that small area had about 100 mushrooms and I harvested half. I made mushroom risotto and a mushroom fettuccine Alfredo. Hopefully in a few weeks the patch will be ready to harvest again!

It's a little late now but next year you should approach restaurants and high end hotels and offer them direct to the chef. Start with a free sample so chef can decide if quality is good enough and then design truffles into his (seasonal) menu.
